Ai Zai Cheng Shrimp Rice(矮仔成蝦仁飯)means the Short Cheng’s shrimp rice in Taiwanese. It has been created for more than 90 years. The chief Cheng Yeh was a short men. People called him the Short Cheng. He was an apprentice in a Japanese restaurant during the Japanese ruled period in Tainan. After several years of learning, he quitted his job and started his own business of selling Japanese style food as a vendor. The Ai Zai Cheng Shrimp Rice has been famous since then. 

The shrimp rice is made with velvet shrimps and charcoal cooked rice. The rice is very soft and filled with secret recipe source which is sweet and tasty. The velvet shrimps have been cleaned by hand and the shells of the shrimp are taken to the duck farm. The ducks eat the shrimp shells and lay the eggs with multiple nutrients. 

The duck egg soup is another famous cuisine here. Bonito broth with pork shreds and duck egg make this simple cuisine tastes delicate and is a great accompany with the shrimp rice.
